Chicken & Three Pepper Chowder

1 | red bell pepper, chopped |
1 | green bell pepper, chopped |
1 | onion, chopped |

12 oz | chicken breast, cubed |
2 T | flour |
1 c | chicken broth |
1/4 c | olive oil |
2 c | frozen corn |
1 c | milk |
1/8 t | cayenne pepper |
1 c | mozzarella cheese, shredded |
cilantro
Cook onion and peppers in olive oil. Add garlic. Set aside.
Cook chicken in same pot, adding more olive oil if necessary. Dissolve flour in chicken broth and pour over chicken. Add corn. Cook until chicken is done and liquid is thick.
Add peppers and onions. Add cayenne pepper. Add milk and cheese. Serve with cilantro.
