Blue Cheese & Grilled Tomatoes

12 tomatoes-halved lengthwise | |
1 Tbsp | olive oil and extra for coating tomatoes |
1 pkg | Treasure Cave Reduced Fat Crumbled Blue Cheese |
1/2 cup | fine dry bread crumbs |

pepper to taste |
Preheat grill to medium heat. Combine olive oil, reduced fat blue cheese and breadcrumbs in a small bowl and mash to a paste. Run each tomato half with a small amount of olive oil to prevent sticking. Sprinkle tomatoes with salt and pepper and spoon even amounts of blue cheese paste on top of each. Arrange tomatoes (cheese side up) on grill. Cover and cook tomatoes until slightly soft and cheese melts. Serve immediately. You can also place tomatoes on a cookie sheet under the oven broiler until cheese melts.
