Jill's Ginger Cookies

2 1/4 cups | flour |
2 tsp | baking soda |
1/2 tsp | salt |
1 Tbsp | ground ginger |
1 tsp | cinnamon |
Sift together dry ingredients. | |
1 1/2 sticks | butter softened |
1 cup | sugar |
1 | egg |
1/4 cup | molasses |
3-4 Tbsp | chopped crystallized ginger |
Cream butter & sugar, beat in eggs & molasses. Add flour mixture, stir in crystallized ginger.
Roll into 1" balls, roll balls in sugar ( may freeze like this then thaw before baking).
Bake 350 degrees for 10-12 minutes on parchment lined sheets.
