1 cup | bread crumbs, http://www.gilliansfoods.com - great breadcrumbs |
1 cup | all purpose flour, http://www.bobsredmill.com/gf-all_purpose-baking-flour.html?&cat=15 - my favorite |
1 | egg |
salt & pepper, to taste | |
3 tbsp | lemon juice |
1 tbsp | capers |
2 tbsp | olive oil |
preheat oven to 375
pound chicken flat
heat oil in skillet
beat egg in shallow bowl
in separate bowl, mix flour, breadcrumbs, salt & pepper
dredge chicken through egg then flour and place in skillet
brown on both sides
cover in lemon juice and capers
bake for 20 min
serve
