    2  sweet potatoes, peeled and cut into 2 inch pieces
    1  yellow onion, diced
    2  garlic cloves, minced
    15 ounce  can red kidney beans, drained and rinsed
    1  red bell pepper, seeded and chopped
    14.5 ounce  can diced tomatoes
    1 tablespoon  gluten free chili powder
    1 tablespoon  smoked paprika
    1 teaspoon  gluten free chipotle chili powder
    1/2 teaspoon  salt
    1 cup  gluten free vegetable broth or water
    1/2 cup  orange juice

Directions:

Add the ingredients to the slow cooker in the order listed. Put on lid and cook on low 6-8 hours or on high 3-4 hours until sweet potato is tender.

Freezing Directions:

Allow to cool. Divide chili among the indicated number of lunch sized containers.

To serve: Thaw. Heat through.

Servings: 6
