Gluten Free Dairy Free Sweet Potato Chili

2 | sweet potatoes, peeled and cut into 2 inch pieces |
1 | yellow onion, diced |
2 | garlic cloves, minced |
15 ounce | can red kidney beans, drained and rinsed |
1 | red bell pepper, seeded and chopped |
14.5 ounce | can diced tomatoes |
1 tablespoon | gluten free chili powder |
1 tablespoon | smoked paprika |
1 teaspoon | gluten free chipotle chili powder |
1/2 teaspoon | salt |
1 cup | gluten free vegetable broth or water |
1/2 cup | orange juice |
Directions:
Add the ingredients to the slow cooker in the order listed. Put on lid and cook on low 6-8 hours or on high 3-4 hours until sweet potato is tender.
Freezing Directions:
Allow to cool. Divide chili among the indicated number of lunch sized containers.
To serve: Thaw. Heat through.
