Quinoa Salad with Chicken

4 | chicken breasts |
1/4 tsp. | salt |
1/2 tsp. | pepper |
1-1/2 c. | water |
3/4 c. | quinoa |
1/4 c. | mint, chopped |
1/2 c. | red onion, diced |
3 tbsp. | red wine vinegar |
1 tbsp. | orange juice |
1 tsp. | orange zest |
1 tsp. | dijon mustard |
1 tbsp. | olive oil |
2 tbsp. | walnuts, chopped |
1 c. | diced apple with peel |
1/2 c. | dried cherries |
Directions:
- cook the chicen and flavor with salt and pepper then cut into strips
- fill a saucepan with water and add the quinoa
- bring to a boil and then reduce the heat to medium low, cover, and simmer for 15 minutes
- once it is done cooking fluff it with a fork and then refrigerate for 30 minutes
- in a medium bowl whisk together the mint, vinegar, orange juice, orange zest, mustard, and oil
- mix in the walnuts, apples, red onions, and cherries
- add the quinoa and toss to coat then serve with chicken strips
