Marinated Tomatoes Yield: 12 servings | |
3 large | fresh tomatoes, sliced thick, (I get 4 slices per large tomato) |
1/3 cup | olive oil |
1/4 cup | red wine vinegar |
1 teaspoon | salt, optional |
1/4 teaspoon | pepper |
1/2 | garlic clove, minced |
2 tablespoons | chopped onion |
1 tablespoon | chopped fresh parsley |
1 tablespoon | chopped fresh basil |
1 teaspoon | dried basil, alternative |
Arrange tomatoes in a large shallow dish. Combine remaining ingredients in a jar; cover tightly & shake well. Pour over tomato slices. Cover and refrigerate for several hours.
