Black Bean Burritos

1 C. | finely chopped onion |
1 C | mushrooms, (sliced) |
½ C | chopped celery |
2 cans | black beans, (rinsed and drained) |
16 oz | can tomatoes |
1-2 | fresh jalapenos, (finely chopped) |
1 Tbs | taco seasoning |
2 cloves | garlic |

Avocado | |
Tomato | |
8 | flour tortillas |
Cook onion, mushrooms and celery. Add black beans, undrained tomatoes, lemon slice, jalapenos, seasoning, garlic and taco sauce (optional). Cook to boiling and simmer 15 min until thick. Remove 1 C and blend in a mixer. Warm tortillas. Serve and add salsa, avocado and tomato as desired.
