Spiced Eggnog Pumpkin Pie

1 9-inch | pie pastry shell |
1 can (15 oz) | pumpkin purée |
1-1/4 c | eggnog |
3/4 c | sugar |
2 | eggs |
1 t | cinnamon |
1/2 t | salt |
1/2 t | ginger |
1/4 t | cloves |
1/4 t | nutmeg |
Roll out pastry and place in 9-inch pie plate.
Mix remaining ingredients in large bowl. Beat until smooth. Pour into pastry.
Bake at 425 degrees for 15 minutes. Reduce heat to 350 degrees, and bake 30-35 minutes longer or until knife inserted near the center comes out clean. (Cover edges with foil during the last 15 minutes to prevent over browning if necessary.)
Cool completely on wire rack. Store in the refrigerator.
