Healthy Bran Muffins- Peggy

3 C | Bran Buds Cereal |
1 C | boiling water |
1/2 C | melted shortening or vegetable oil, alternative |
1 1/2 C | brown sugar |
2 | eggs,, (beaten) |
1/2 quart (2 cups) | buttermilk |
2 1/2 C | flour |
2 1/2 tsp. | baking soda |
1 tsp | salt |
Pour boiling water over 1 1/2 C Bran Buds. Let stand while mixing together all the other ingredients except the remaining Bran.
Add the 1 1/2 C dry Bran Buds and 1 1/2 C soaked Bran Buds and mix well.
Store batter in refrigerator . Batter will keep up to 6 weeks.
Bake as needed in hot oven (400 degrees).
Bake small muffins 8 - 10 minutes
Bake large muffins 15 - 20 minutes
