CAKE - Rhubarb Cake

2 1/4 cup | Light brown sugar, packed |
1/2 cup | Shortening |
1 | Egg |
1 cup | Buttermilk |
1 tsp | Baking soda |
2 cup | Flour, sifted |
1 1/2 cup | Rhubarb, diced |
1 tsp | Vanilla1 tsp Cinnamon |
Cooking Instructions
Cream 1 1/2 cups sugar with the shortening.
Mix the buttermilk with the baking soda and add it with the egg to the sugar mixture.
Add flour alternately with rhubarb, then add the vanilla and pour into a greased and floured 2 quart baking dish.
Sprinkle with remaining sugar mixed with the cinnamon.
Bake at 350 degrees for 40 to 45 minutes.
