1 can | or pouch, (6-7 1/2 ounces) pink or red salmon, drained and chunked |
4 ounces | neufchatel light cream cheese, softened |
4 | scallions, finely chopped |
2 teaspoons | reduced-sodium soy sauce |
2 teaspoons | rice vinegar |
1 1/2 teaspoons | wasabi paste |
1 box (1.9 ounces) | mini filo shells |
DIRECTIONS Preheat the oven to 350°F. Mash the salmon, cream cheese, scallions, soy sauce, vinegar, and wasabi paste in a medium bowl. Fill the shells with the mixture and place on a baking sheet. Bake for 5 to 7 minutes or until the pastry is golden and the filling is hot. Serve immediately. Recipe Notes These bites can be prepared ahead of time for a last-minute snack. Store the salmon mixture in an airtight container in the refrigerator, then simply spoon a heaping tablespoon into each shell and bake as directed. Adjust the wasabi paste to your liking.
