Brown Sugar Crusted Chicken Goat Cheese Salad......... Ingredients
    2-2 oz.  chicken breasts
    1 c.  ground pecans
    1/4 c.  brown sugar
    1/4 c.  bread crumbs
    2  eggs, beaten
      sea salt, to taste
    5 c.  Romain lettuce salad mix
    1/3 c.  dried cranberries
    2  whole hard boiled eggs, diced
    2  celery ribs, chopped
    1/2  green bell pepper, chopped
    1/4 c.  red onion, chopped
    1 c.  grape tomatoes
    1  whole cucumber sliced
    8 oz.  crumbled goat cheese
      croutons
    3 tbsp.  Sweet Vidalia Onion Salad Dressing

Directions
Preheat oven to 325 Degrees.

1. Season the chicken breasts on both sides with sea salt. Combine the ground pecans, brown sugar, and bread crumbs in a separate bowl or plate. Dip the chicken in the egg wash and coat the chicken breasts on both sides with the bread crumb mixture evenly. Spray a baking sheet with cooking spray and place the chicken breasts on the cooking sheets. Place baking sheet on the highest oven rack and bake for 15-20 minutes or until cooked. Because there is sugar in the bread crumb mixture your chicken may begin to caramelize. When finished baking, sprinkle with a little sea salt and set aside.

2. In a medium size bowl, combine salad mix, Craisins, eggs, celery, green bell pepper, red onion, grape tomatoes, cucumber sliced, goat cheese, croutons, and toss with salad dressing. Turn the salad to a plate. Take one piece of your chicken breast and cut into slices and place on top of the salad and enjoy!
