Chocolate Marshmallow Cookie Bars

Bottom layer: | |
1/2 c | butter |
1 oz square | unsweetened chocolate |
1/2 c | sugar |
1 c | flour, pack in cup |
1 tsp | baking powder |
1 c | chopped pecans |
1 tsp | vanilla extract |
2 eggs lightly beaten Cream Cheese Layer: | |
8 oz pkg | cream cheese, softened,, (use 6 oz then use 2 oz in frosting) |
1/4 c | butter, softened |
1/4 c | sugar |
2 TBL | flour |
1/2 tsp | vanilla extract |
1 | beaten egg |
1/2 c | chopped pecans |
1 c | semi sweet chocolate chips |
2 c miniature | marshmallows |
Frosting: | |
1/4 c | butter |
1 oz square | unsweetened chocolate |
2 oz | cream cheese |
1/4 c | milk |
1 tsp | vanilla extract |
1 lb box | powdered sugar |
Place butter and unsweetened choc in saucepan over low heat. Heat just until it melts. You can do this in microwave too. Stir in sugar. Combine loud, baking powder and nuts. Add them to chocolate mixture and stir well. Stir in vanilla and eggs. Spread batter into greased and floured 9 x 13 cake pan.
Cream cheese filling:
Use 6 oz cream cheese. Combine with butter, sugar, flour, and vanilla. Stir until smooth. Add beaten egg and stir until well combined. Stir in nuts. Spread cream cheese layer over chocolate layer. Use a spatula to smooth out. Sprinkle choc chips over top. Bake at 350 for 20 to 25 mins. Take pan put of oven, sprinkle with marshmallows and put back in oven for 2 mins.
While marshmallows are baking, start frosting. Your pan will come out of oven before you're through with frosting but that is ok.
Melt butter in saucepan over med low heat or in microwave. Break the unsweetened chocolate square into 2 parts and stir into butter. Stir in softened cream cheese and the milk. Heat mixture until it can be stirred smooth. (you can use microwave, stopping to stir after 20 sec increments) Remove saucepan from heat and beat in vanilla. Beat in apprx cup of powdered sugar. When incorporated, beat in another cup. Then beat in rest of box.stir frosting until smooth. Spread over hot bars, swirling it into the marshmallows. It will be soft but don't worry. It will firm up as the bars cool.
Set pan on wire rack or cool burner to cool. When pan is cool to touch, put in refrigerator and let chill for at least an hour.
To serve cut bars into 32 pieces. Very rich bars.
