BAKED POTATO CASSEROLE

10 med | potatoes, (peeled and cut into 1 inch chunks |
1-15oz can | evaportated lowfat milk. |
3/4 c. | Light sour cream |
1 tsp | salt |
3/4 tsp | black pepper |
2 1/2 c | shredded cheddar cheese |
6 slices | cooked turkey bacon crumpled, (or 3/4 c. Bacon bits) |
6 | sliced green onions |
1. Bring potatoes to boil, cover and cook on med heat about 25 min (drain)
2. Preheat oven to 350, grease 3 qt casserole dish
3. Add milk, sour cream, salt & pepper. Beat with hand held mixer until smooth. Stir in 2 c cheese and 1/2 of the bacon. Spoon mixture into a greased casserole dish.
4. Bake for 25 min. Top with remaining cheese and bacon. Bake an additional
3 min.
