    10 med  potatoes, (peeled and cut into 1 inch chunks
    1-15oz can  evaportated lowfat milk.
    3/4 c.  Light sour cream
    1 tsp  salt
    3/4 tsp  black pepper
    2 1/2 c  shredded cheddar cheese
    6 slices  cooked turkey bacon crumpled, (or 3/4 c. Bacon bits)
    6  sliced green onions

1. Bring potatoes to boil, cover and cook on med heat about 25 min (drain)
2. Preheat oven to 350, grease 3 qt casserole dish
3. Add milk, sour cream, salt & pepper. Beat with hand held mixer until smooth. Stir in 2 c cheese and 1/2 of the bacon. Spoon mixture into a greased casserole dish.
4. Bake for 25 min. Top with remaining cheese and bacon. Bake an additional
3 min.
