1 medium (about 1/2 lb) | green pepper, 1/2-inch dice (about 1 cup) |
1 medium (about 10 oz) | yellow squash, trimmed 1/2-inch dice (about 2 cups) |
1 pkg (10 oz) | Food You Feel Good About Baby Bella Mushrooms, halved |
1 medium (about 10 oz) | zucchini, ends trimmed, 1/2-inch dice (about 2 cups) |
1 (about 3/4 lb) | eggplant, ends trimmed, 1/2-inch dice (about 3 cups) |
2 tbsp - or more to coat with canola oil and grape-seed oil, parsley, garlic, thyme | |
Salt | |
pepper to taste |
You'll Need: one large baking sheets
Directions
Preheat oven to 450 degrees.
Toss peppers, squash, mushrooms, and eggplant in large bowl with basting oil; season to taste with salt and pepper. arrange in single layer on large baking sheets.
Roast convection in the middle of oven of oven 35 min. Continue roasting about 15 min until tender and browned.
