Fresh Apple Cake

    1 1/2 cup  cooking oil
    3 cup  sifted all purpose flour
    3 cup  chopped apples
    2 cup  sugar
    1 cup  chopped nuts
    3  eggs
    1 tsp  Cinnamon
    1 tsp  soda
    1/4 tsp  salt
    1 tsp  nutmeg
    1 tsp  vanilla
Mix together, oil, eggs, sugar, vanilla. Add all dry ingredients to sugar mixture. Add apples & nuts last. Add raisins if desired. Pour into well-greased tube pan (no flour) and bake at 350 for 1hour and 15 minutes. After cake has cooled to lukewarm (or cooler) in pan invert and let fall onto large plate. Icing:
    1 1/2 cup  brown sugar
    1/2 cup  margarine
    1 cup  milk, (can use evaporated milk)
Cream Cheese Icing: Smallest can of commercial vanilla frosting (half of the can is plenty)
    8-12 oz.  cream cheese, (room temperature)

Combine the two ingredients with electric mixer and frost.

*** I use both frostiness on the same cake because the brown sugar icing tends to harden the outside of the cake and the cream cheese softens it.
