6 oz. bacon diced, 4 eggs, 2 cups of whole milk,, 6 oz. sharp white cheddar cheese, shredded, 1/2 cup sliced scallions, 1/2 tsp salt, 1 loaf challah bread or brioche

Heat oven to 350 in skillet over medium heat, cook bacon 5-7 min until crispy or can cook it in microwave.
In a large bowl whisk eggs and milk. Stir in cooked bacon, cheese, scallions salt and pepper. Stir in bread cubes, coating well with egg mixture. Set aside ten min. Stirring one in a while to coat w egg mixture..
Transfer bread, egg mixture to 2 quart baking dish. Cover with foil. Bake at 350 for 35 min. Remove foil and bake another 10-15 min until brown and eggs are set and insert knife or toothpick and it comes out lean. Allow to cool 10 min and serve
