Ginger Tofu with Spinach & Roast Vegetables

Source:
250g | Tofu firm |
2 tbl | Ginger grated |
2 tbl | Tamari or soy sauce |
3 | Carrots |
1 handful | Spinach |
1 tsp | Sesame seeds |
1 | potato |
1 | Kumara (sweet potato) |
2tbl | Olive oil |
1. Peel and cut up potato and kumara for roasting
2. Peel 2 carrots and slice lenghways into 4 lenghts each.
3. Put in roating pan with olive oil oil and roast in oven until cooked.
4. Break up and Crumble Tofu in a bowl.
5. Grate Ginger and mix into Tofu.
6. Cut up remaining carrot into thin 1 inch sticks
7. Put oil into frypan. Heat pan and then turn down heat.
8. Add the tofu,Tamari (soy sauce) & sesame seeds.
9. Add carrot sticks.
10. Stir fry on low heat for around 10 minutes until slightly browned.
11. Turn heat off and stir in the spinach until it is wilted or slightly cooked.
Serve Tofu with roasted vegetables.
