Chicken & roasted pumpkin risotto

2 | Chicken breasts, sliced |
300gms Pumpkin | |
2C | Mushrooms |
1 med | Onion |
1 | Asparagus bunch |
1/2 C | White wine |
5-6C | chicken stock |
2C | risotto rice |
1. Cook chicken & mushroom in a pan till browned. Remove from pan
2. Cook onions on medium heat 4 2 mins. Add rice cook 4 2 mins,stir continuously. Add wine, stir till absorbed.
3. Add 1cup of stock at a time, stirring until absorbed b4 each new addition, about every 5 mins. Continue until rice is tender, about 25-30 min. In last 5 mins stir in chicken, mushrooms & asparagus in last 5 min
4. Stir in parmesan, parsley & cream(optional)
