Griddled pineapple with spiced caramel sauce

Cut top and bottom off pineapple. |
Cut down in eight slices and loosen skin but all the way.
Very hot griddle pan, lay pineapple in, press down to make marks. 2 mins each side the sprinkle with sugar to glaze.
Cut top of pineapple in half and use to decorate plate.
Make sauce.
4 tablespoons sugar in frying pan, add seeds of vanilla pod and 1/4 teaspoon of 5 spice. Shake pan to allow sugar to spread over pan. Cook till golden brown then turn off heat. Add a little cream to loosen then add more cream to suit.
Spoon caramel over pineapple.
