Kale Ham Soup

2 lbs | ham bone, (with bits of ham on it), Honey Baked Ham is best |
9 cups | water |
1 large | onion, chopped |
4-6 cloves | garlic, minced |
1/2 lb | smoked ham, chopped,, (from Honey Baked Ham) |
1 bunch | kale, rinsed and sliced with ribs removed |
fresh ground black pepper, to taste | |
1 1/2 lbs | potatoes, cut into chunks |
Place ham bone and water in a large pot. Bring to a boil. Cover and simmer for 30 minutes. Add chopped onions, garlic, ham, kale, and pepper. Bring soup back to a simmer and continue cooking, covered, for an hour. Add potatoes and simmer until tender (10 minutes). Serve hot with crusty bread.
