Chinese Pineapple Chicken

1 medium | chopped scallion |
1 tsp. | chopped fresh ginger root |
1 tsp. | minced garlic |
4 oz. | boneless, skinless chicken breast, cut into 1” cubes |
1 | green pepper |
½ cup | canned pineapple tidbits, packed in juice |
1 Tbsp. | black bean sauce |
½ cup | cooked brown rice, kept warm |
Coat a large nonstick skillet with cooking spray and set pan over
medium-high heat. Add scallions, ginger and garlic; cook until soft,
about 3 min. Add chicken and pepper and cook until lightly
browned on all sides, stirring often, about 5 min. Add pineapple
(with its juice) and black bean sauce to skillet; bring to a simmer.
Simmer until chicken is cooked through, about 5 min. more.
Serves 1 – 6 WW points
