EGGS - BURRITO - Breakfast Burrito

2 tbsps | cooking oil,, (butter) |
15 ozs new potatoes (diced fresh) 8 ozs sausage (breakfast, links) | |
1 tbsp | minced green chilies |
1/2 cup | minced onion |
1/2 cup | roma tomato, seeded and chopped |
1/2 cup | red peppers |
11 | eggs |
7 slices | monterey jack cheese |
6 | flour tortillas,, (8 inch) |
16 oz | salsa |
1 Put 1tbs of cooking oil/butter in a large frying pan and cook potatoes until a nice brown crust forms.
2 Remove Potatoes and put in separate dish.
3 Cook sausage links according to directions on package.
4 Dice cooked sausage links and set aside in separate dish.
5 Add more cooking oil/butter.
6 Add onions, chilis, peppers, tomatoes. Saute until everything just starts to turn soft.
7 Add sausage and potatoes.
8 Beat eggs together and add to mixture in frying pan.
9 Keep moving everything around so the eggs can seep into all the cracks and crevices and surround all of the ingredients.
10 Heat tortillas between 2 moist paper towels in the microwave for 30 seconds.
11 Immediately place a slice of cheese, ripped in half, on to the tortilla, end to end.
12 Top with filling.
13 Fold over right side, fold up bottom, then fold over left side. Turn entire burrito over to hold it together.
14 Have salsa on the side or pour all over.
