1lb | ground beef |
1 | apple, peeled, cored and grated |
1 small | onion, chopped |
1 clove | garlic, minced |
1 tsp. | dried thyme |
1 1/2 tsp. | salt, divided |
1/2 tsp | pepper, divided |
1 can(14 oz) | whole tomatoes, drained and chopped |
3 tbs, plain dry breadcrumbs 1 1-2 lbs. all purpose potatoes, peeled | |
1 tbs. | butter |

Preheat oven to 450. In a 9 " ovenproof skillet over medium heat, cook beef, apple, onion, garlic, thyme, 3/4 tsp salt and 1/4 tsp pepper until beef is browned and onion is tender, 8-10 minutes. Remove from heat; stir in tomatoes and breadcrumbs, transfer to a bowl. Cut potatoes into 1/8 inch slices; do not rinse with water. Sprinkle with remaining salt and pepper.wipe same skillet clean; place over medium high heat, until hot and remove. Arrange half o the potatoes, overlapping, on bottom and half up sides of skillet. Spoon beef mixture into potatoe shell;,press down. Cover with remaining potato slices; dot with butter. Bake until potatoes are tender, 30-35 minutes. Let stand 10 minutes. Place serving platter over skillet and invert.
