bucatini with shrimp and spicy cherry tomato pan sauce

3/4 lb | fat spaghetti noodle |
2 T | olive oil |
2cloves | garlic minced |
2pints | cherry tomatoes halved |
3/4 lb | shrimp peeled and deveined |
pinch | crushed red pepper |
6 oz | aged feta cheese broken in pieces |
1 handful | basil thinly sliced |
bring lg pot of salted water to boil
add pasta and cook until al dente a out 9 mins
drain
reserving 1/3 c of pasta liquid to use in sauce
meanwhile in a lg skillet heat oil over med- high heat
add garlic and tomatoes
cook stirring occ. until tomatoes soften and bubbling about a min
if not a lot of juice add 1 T of water and splash red wine vinegar
add shrimp and crushed peppers
then toss until shrimp are cooked about 2 mins
add pasta with pasta liquid toss over low heat
remove from heat stir in feta and basil toss and add 1 T more oil and additional feta
serves 4
