Asparagus Self Crusting Flan

1 large | onion chopped |
2 cloves | garlic |
1 tablespoon | butter |
2 | cooked potatoes cubed |
1/2 cup | milk |
3 | eggs |
1/4 cup | liquid from canned vegetables |
1/2 teaspoon | salt |
1/2 cup | self raising flour |
1cup | grated sharp cheese |
1 can | asparagus spears, (or 1can can corn) |
Saute: onion & garlic, add potatoes & heat through.
Whisk eggs with liquid, salt & flour until blended,
Combine mixture with the onion & garlic.
Pour into greased pie plate, cover the top of pie with
Grated cheese asparagus or corn.
Bake: 410 degrees 20 - 30 minutes
