    8c  water
    1c  kosher salt
    1/2c  dark brown sugar
    12  black peppercorns, 12 to 15
    12  juniper berries, 12 to 15
    2  bay leaves
    1bunch  fresh thyme
    1bunch  fresh sage
    1  orange, cut into eight pieces
    14lb  ice, 2 bags 7lb each

Place everything but the ice into a pot over high heat. Bring to a boil. Pour over ice to cool.
Once cool, place whole turkey or turkey parts in the the brine mixture. Whole turkey for 10 to 12hrs. Turkey parts for 1 1/2 to 2 hours.
