Turkey Brine

8c | water |
1c | kosher salt |
1/2c | dark brown sugar |
12 | black peppercorns, 12 to 15 |
12 | juniper berries, 12 to 15 |
2 | bay leaves |
1bunch | fresh thyme |
1bunch | fresh sage |
1 | orange, cut into eight pieces |
14lb | ice, 2 bags 7lb each |
Place everything but the ice into a pot over high heat. Bring to a boil. Pour over ice to cool.
Once cool, place whole turkey or turkey parts in the the brine mixture. Whole turkey for 10 to 12hrs. Turkey parts for 1 1/2 to 2 hours.
