Applesauce Oat Muffins

1 1/2 cups | AP Flour |
1/2 c | whole soy flour,, (sub whole wheat flour) |
3/4 c | rolled oats |
1/2 c | brown sugar |
1 T | baking powder |
1 1/2 tsp | cinnamon |
1/2 tsp | nutmeg |
1/2 tsp | salt |
2 | eggs,, (sub flax eggs) |
1/4 c | veg oil |
1/2 c | applesauce |
1 c | soy milk |
1/2 c | raisins,, (optional) |
Preheat oven to 400F. Blend together all dry ingredients in a large mixing bowl. Combine all liquid ingredients in a separate bowl. Gradually add liquid ingredients to dry ingredients. Blend slowly until ingredients are thoroughly mixed. DO NOT OVER MIX. Fill paper lined muffin tins with batter, three quarters full. Bake at 400F for 13 to 15 min. Remove from oven and cool.
Makes 12 to 14 muffins.
