The strong flavors of bacon and sautèeted onions are a good match with the greens.
    1tbsp  olive oil
    2 slices  bacon strips, cut crosswise into thin strips
    1/2 medium  onion , chopped
    2 cloves  garlic, minced or pressed or prepared minced Garlic
    2 servings  Greens Assertive, shallow blanched
    1/4 c  broth chicken; canned, low sodium
Vinegarette
    1/4c  vinegar
    1/2t  salt
    1/3c  Splenda Brown Sugar Blend
    1/4t  garlic, minced
    1 1/2t  mustard, prepared


1. Fry the bacon in a large saute pan over medium heat until crisp, about 5 minutes Use a slotted spoon to transfer the bacon to a plate lined with paper towels, leaving th(e bacon drippings in the pan.
2. If necessary, add oil to the bacon dripings in the pan to make 2 tablespoons. Add the onion and cook until softened, about 3 minutes. Add the garlic and cook until fragrant, about 30 seconds. Add the greens and stir to coat them with the fat. Add the broth, cover, and cook until the greens are heated through, about 2 minutes. If any exccss liquid remains, remove the lid and continue to simmer until the liquid has thickened slightly, about 1 minute longer.
Mix up vinegarette and pour over the greens. Serve immediately.
