Vegetable Ragusa

Ingredients: 2 Pre-cooked potatoes (diced)
    2 Handfuls  peas
    1 Handful  broad beans
    1 Handful  chopped fresh herbs
1 Onion or Shallot (quartered or roughly chopped)
    150ml  stock, (chicken or vegetable)
    100g  butter, (diced)

Method:
1) Gently fry off the onions or shallots in olive oil until slightly soft and going golden on the outside.
2)Then simply add all the vegetables and stock and cook on a rolling boil for a few minutes until all the vegetables are cooked to your liking and the stock is beginning to reduce.
3) Last, add in the fresh herbs, some salt and pepper to taste and serve.
