Green Beans, boiled

1 lb | green beans |
1 tsp | salt |
1 tbsp | olive oil |
salt and pepper to taste |
Bring 2 1/2 quarts of water to a boil in a large saucepan over high heat. Prep beans by washing well and nipping off the tops and tails with your fingers or a knife. Add the salt and beans and cook untl tender*, about 5 minutes. Drain beans well. Drissle with olive oil and sprinkle with salt.
*Boiling times vary according to the thinkness and freshness of the beans. Really fresh, thin beans, not much thicker than a strand of linguine, may be done in as little as two minutes. Most beans in the supermarket, though, have traveled some distance and are considerably thicker. Due to their age and size they need five to six minutes to become tender.
