Lemon Fruit Cake

1 pound | butter |
2 1/2 cups | sugar |
4 cups | flour |
1 t | baking powder |
1/2 t | salt |
1 1/2 oz | lemon extract |
6 | eggs |
1/2 lb. | candied cherries |
1/2 lb | candied pineapple |
2 lb | white raisens |
1 lb | pecans |
Cream butter and sugar add eggs and extract. Sift flour, baking powder and salt, add to creamed mixture add nuts fruit and raisens. Grease and flour pans. Bake 2 1/2 to 3 hours at 250. Will make 3-4 loaves or 1 angel food cake pan and a loaf.
