50ml | milk |
1 | egg, separated |
Makes 4 pancakes
Sift flour into clean bowl. Add milk and egg yolk, and mix together thoroughly. Whip egg white until it holds stiff peaks, then slowly fold into batter mixture.
Spray a non-stick frying pan with low fat cooking spray, and heat gently. Add spoonfuls of pancake batter to frying pan, flipping over after 10-15 seconds. Continue until both side are a light golden brown, and repeat with remaining batter.
