Beef, Tony's Tri Tip

2tbsp | Lemon pepper seasoning |

Fire up the grill on high heat. Mix garlic and lemon pepper seasoning in a gallon sized plactic bag. Put tri tip into the bag, shake and rub the seasonings into the roast well.
At the grill, starting with the fat side up- sear the meat over high heat for 3 or 4 minutes then a quarter turn and again 3 or 4 minutes (this gives you that pleasing diamond grill marks and also keeps the hot grill from burning in deep and creating tough stops in the finished product) Then flip and repeat "4-quarter turn-4" with the fat side down. Turn off all but one burner and turn down that burnner to low (low in the summer, med in the winter). Move the meat as far away as you can from the heat source. Cook until until food thermometer reaches 140ºf for medium rare (about 30 to 45 minutes depending on the time of the year).
Remove from the grill let sit for 10minutes to allow the internal juices to settle. Slice thin and serve.
