Gilda's Italian stuffed peppers

Ingredients; | |
6 medium sized | red peppers |
1 lb | lean ground beef |
1 medium | sweet onion |
4 | whole garlic cloves |
1/2 cup | banana |
1 cup | spaghetti sauce |
2 cups | fresh eggplant |
3 tsp | fresh oregano |
1 1/2 tbsp | olive oil |
1/4 cup | parsley |
Directions;
sauté onion and garlic in olive oil. Add eggplant, parsley and rest of ingredients except sauce and meat. Stuff peppers. Pour sauce on top, bake at 400 for 45 minutes.
