2T | olive oil |
2 | chicken thighs, boneless skinless, cut into large dice |
3 | polish sausage, cut into large dice |
1 medium | onion |
1rib | celery, chopped |
2 medium | green bell peppers chopped |
1 | bay leaf |
10oz | canned Ro Tel diced Tomatoes with chilis, (with chilis) include juice |
7oz | canned tomatoes diced, 1/2 of a 14oz can |
1 lg | tomato diced |
28oz | canned chicken broth |
1/2t | ground cumin |
1/2t | chili powder |
4 sprigs | chopped cilantro |
1 1/2c | white rice |
In a very large deep skillet add oil till hot. Then Brown chicken, add onion, peppers, and celery, saute until wilted. Add sausage and cook on medium another 2 minutes or so.
Add all other ingredients except rice and simmer a few minutes to meld flavors** check seasonings and add more chilis or salt and pepper at this point.
Add Rice and cover. Simmer on medium-low another 10-15 minutes until rice is done. (If doubling recipe simmer 20min)
