Popeyes- worthy spinach pie

| 2 tbsp | olive oil |
| 1 1/2 cups | spinach |
| 1 | onion peeled and chopped |
| 2 cups | crumbled feta cheese |
| Salt | |
| pepper to taste | |
| 1 lb | phyllo dough, thawed if frozen |
| Olive oil |
Preheat the oven to 400 degrees. In a sauté pan, heat the olive oil over low heat. Sauté the spinach and onion for 10 minutes. Mix in the cheese, salt and pepper.
Lay out a piece of phyllo dough and paint it with a little olive oil. Place a small portion of filling into the center, and fold over several times to enclose the filling completely. Repeat with remaining phyllo until all the filling is used up. Bake for 25 - 30 minutes or until golden brown.
