Roasted Beets and Goat Cheese Quinoa

Roasted Beet and Goat cheese quinoa | |
1 large | beet scrubbed clean and chopped into note sized prices |
1/4 c | quinoa |
3/4 c | water or veggie stock |
2 heaping tablespoons | goat cheese |
Preheat oven 400 scatter the chopped beets on foil topped sheet spray with oil, roast for 25-30 min until tender
While the beers are roasting rinse the quinoa with water and then combine with veggie stock and bring to boil, reduce heat to simmer and cook 12 min
When done add cheese and stir until melted add beet and serve
