Fresh Corn Salad with Heirloom Tomatoes and Lime (Weight Watchers)

For 3/4 cup per serving Points Plus 2 Ingredients | |
2 medium | corn on the cob, fresh (2 cups) |
2 small | fresh tomato,, (es), preferably heirloom, diced |
3 medium | uncooked scallion,, (s), chopped |
3 Tbsp | mint leaves, fresh, chopped |
1/2 oz | green hot chili peppers, seeded and minced |
1 | jalapeƱo, seeded and minced |
1 | clove,, (s) (medium) garlic clove(s), minced |
2 Tbsp | unsweetened lime juice |
2 tsp | olive oil |
1/2 tsp | table salt |
Instructions
Toss together all the ingredients in a serving bowl. Serve at once or cover and refrigerate up to 2 hours. Yields 3/4 cup per serving.
Notes
If you prefer your corn cooked, put the kernels in a small microwavable dish. Cover the dish with plastic wrap and vent one corner. Microwave on High until the corn is tender, about 4 minutes.
