Texas Style Casserole

| * preheat oven to 350 degrees 1 spray olive oil cooking spray | |
| 2 c. | frozen hash brown potatoes |
| 1 c. | frozen corn kernels, thawed |
| 1 c. | frozen pepper strips, thawed |
| 8 oz. | turkey sausage, thinly sliced |
| 1 c. | skim milk |
| 2 large | eggs |
| 1/4 tsp. | salt |
| 1/4 tsp. | pepper |
| 3/4 c. | cheddar cheese, shredded |
Directions:
- coat a medium square baking dish with cooking spray
- place potatoes and then vegetables in baking dish then top with sausage
- in a small bowl, beat together the milk, eggs, salt, and pepper then pour over the sausage and sprinkle with cheese
- bake until the casserole is hot and the cheese is browned (about 45 minutes)
