Stuffed Shells

½ of a (12-ounce) pkg jumbo shells, uncooked | |
2 T | butter |
1 lb gr | beef |
1 ½ lb gr | pork, (I often use 1 ½ lb gr beef and no pork) |
1/3 c | minced onion |
¼ c | minced celery |
1 clove | garlic, minced |
1/3 c | cooking sherry |
1/3 c | grated Parmesan cheese |
1 tsp | salt |
1/3 c | dry bread crumbs |
1 (28-ounce) jar | prepared spaghetti sauce |
2 cups (8-ounces) | shredded mozzarella cheese |
Prepare jumbo shells according to package directions; drain. In large
skillet, melt butter (I skip this). Add beef and pork. Cook until
lightly browned. Add onion, celery, and garlic; cook until tender.
Remove from heat; stir in sherry, cheese, salt and bread crumbs. Cool mixture (and shells!) for 10 minutes. Stuff each shell with meat
filling. Pour ½ jar spaghetti sauce in the bottom of a 13 x 9 inch
baking dish. Arrange stuffed shells in dish. Pour remaining sauce
evenly over all. Top with cheese. Cover and bake in a 350 degree
over for 35 minutes. Yield 5-7 servings.
