Spicy Sausage Soup

1 lb. | mild italian sausage |
4 slices | bacon |
1 large | onion |
1 tbsp. | minced garlic |
5 cans | chicken broth |
6 | potatoes, thinly sliced |
1 c. | heavy cream |
1/4 bunch | fresh kale |
Directions:
- cook the sausage until brown and crumbly, set aside
- cook the bacon in the same pan until crisp, drain leaving a few tbsp. of drippings in the bottom ofmthe pan
- stir in the onions and garlic, cook until translucent (5 minutes)
- pour the chicken broth into the pan with the bacon and onion mixture and bring to a boil over high heat
- add the potato slices and boil until fork tender (20 minutes)
- reduce the heat to medium and stir in the heavy cream and sausage
- heat through
- mix the kale into the soup just before serving
