Smashed Potato soup SLOW COOKER

3 1/2 lbs | potatoes cubed |
1/2 cup yellow and/or red pepper | |
1 1/2 tsp | garlic |
1/2 tsp | pepper |
4 1/2 C | chicken broth |
1/2 C | half and half |
1C | cheddar cheese shredded |
1/2 C | green onions chopped |
In slow cooker combine potatoes, peppers, garlic and black pepper. Pour broth over all. Cover and cook on low for 8-10 hours, or high for 4-5 hours.
Mash potatoes slightly, stir in half and half, cheddar and green onions.
