Buy 4 shanks with the marrow in the center. In a large saucepan, heat 2 tablespoons olive oil. Brown the meat on all sides. Remove the meat to a platter, reduce the heat to medium and add 1/2 cup diced carrots, 1/2 cup diced onions, 1/ cup diced celery, 2 garlic cloves ( finely chopped), 1/2 tbsp thyme, and 1/2 tbsp rosemary. Sauté the vegetables for 5 minutes, stirring continuously. Then put the meat back in the saucepan, add 1 cup of dry white wine and 1 cup chicken broth. Bring to a boil, reduce heat, cover and simmer for 1 hour. Check from time to time- as you may have to add more broth. |
Meanwhile, prepare a sauce for the meat: in a food processor place 1 cup of fresh cilantro with 2 garlic cloves and 1 cup fresh parsley, salt and paper and the Zest of 1 lemon. Process until all the ingredients are finely chopped. Remove to a bowl,. Place the meat in a serving platter, pour the pan juices over it and serve with the parsley sauce on the side. Serve this dish with polenta or mashed potatoes serves 4
