Shrimp Salad

4 lbs shrimp large 16-20/ilb | |
3T | Salt |
1tsp | salt |
1 lemon quartered | |
2C | mayo |
1tsp | Dijon mustard |
2T | white wine vingar |
1tsp | pepper |
6T | Dill fresh minced |
1C | red onion minced |
3C | celery minced |
Bring 5 quarts of water to a boil, with lemon and 3T salt. Add 1/2 of shrimp and reduce heat to medium. Cook for 3-4 minutes. Remove to coo water. Bring back to boil and repeat.
Large bowl- whisk together mayo, mustard, vinegar, salt, pepper, and dill. Add shrimp. Add onion and celery and check for seasonings. Refrigerate.
