SOBA - Asparagus, Snow Peas and Soba Noodle Salad with Ginger-Peanut Dressing :]>

2 tablespoons | peeled and minced fresh gingerroot |
¼ cup | mirin,, (sweet rice wine) |
1 tablespoon | granulated sugar |
¼ teaspoon | kosher salt |
2 tablespoons | creamy or crunchy peanut butter |
¼ to ½ teaspoon | cayenne pepper |
2 tablespoons | reduced-sodium soy sauce |
2 tablespoons | rice vinegar |
1 teaspoon | sesame oil |
Salad: | |
1 pound | asparagus |
2 ounces | snow peas |
1 small | red bell pepper |
3 ounces | shiitake |
cremini mushrooms, alternative | |
1 cup | bean sprouts, rinsed and drained |
8 ounces | chuka soba or ramen noodles |
Optional: ¼ cup dry-roasted peanuts, coarsely chopped
1. To prepare the dressing: Combine the ginger, mirin, sugar, salt, peanut butter, cayenne, soy sauce, vinegar and sesame oil in a small saucepan. Place over medium-low heat and whisk until the dressing is smooth. Set aside.
2. To prepare the salad: Trim the asparagus and cut on the diagonal into 2-inch pieces. Pull the strings from the snow peas and cut each on the diagonal into thirds. Bring a pan of water to the boil, add the asparagus and time 3 minutes. Add the snow peas and time 30 seconds. Drain in a colander and rinse with cold water until the vegetables are cool. Drain well and pat with paper towels to absorb excess moisture. Put the vegetables into a bowl.
3. Seed and stem pepper. Cut into ¼-inch-thick slices. Trim the mushroom stems and slice thinly. Add pepper and mushrooms to the peas and asparagus along with the bean sprouts. Toss with a couple tablespoons of the dressing. Refrigerate.
4. Bring a large pot of water to the boil. Break the noodles into shorter lengths and add to the boiling water; time according to package directions. Test for tenderness. Drain well.
5. Add the noodles to the vegetables. Toss with the remaining dressing and set aside for about 15 minutes, stirring occasionally, so the noodles absorb some of the dressing. Stir in the peanuts if using and serve.
