PUDDING - Banana Pudding

BEST-EVER BANANA PUDDING from Southern Living - 1990 | |
2 2/3 c | sugar |
1/2 c | all-purpose flour |
1/8 teaspoon | salt |
6 c | milk |
6 | egg yolks |
2 tsp | vanilla extract |
1 (12-oz) package | vanilla wafers |
6 large | bananas |
1/4 c | powdered sugar |
Combine first 3 ingredients in a heavy saucepan. Whisk together milk and egg yolks; stir into dry ingredients. Cook over medium heat, whisking constantly until smooth and thickened, 15-20 min.. Remove from heat; stir in vanilla.
Arrange one-third of wafers in bottom of a 34-quart baking dish. Slice 2 bananas; layer over wafers. Pour one-third of pudding mixture over bananas. Repeat layers twice, arranging remaining wafers around outside of dish.
Beat whipping cream at medium speed with electric mixture until foamy. Add 1/3 cup powdered sugar 1 tablespoon at a time, beating until soft peaks form, (2 to 4 minutes). Chill 8 hours.
Yield: 8 to 10 servings.
