Potato Focaccia

Store bought pizza dough | |
1T | Olive oil |
3/4 C | pancetta diced |
1 1/2 C | potatoes peeled and diced |
2tsp | rosemary chopped |
salt | |
pepper | |
1tsp | lemon zest |
2T | olive oil |
Heat olive oil in skillet over med heat. Add pancetta and cook slowly. Remove.
PLace potatoes in salted water. Bring to a boil for 8 minutes. Remove
Pour pancetta fat over potatoes and add pancetta, rosemary, salt, and pepper, and lemon zest. Toss well
Oil pan, place dought and oil top of dough. Let rise then push in dents. Sprinkle with potato mixture.
Bake 25 minutes at 375.
