Dallas Morning News Mexican Meatballs Ingredients
    3 slices  white bread
    1/2 cup  milk
    2 pounds  ground beef,, (or a combination of the two) with at least 10% fat
    1  yellow onion, minced or grated
    4 cloves  garlic, minced
    5 tablespoons  fresh oregano leaves, finely chopped
    2 tablespoons  cilantro or parsley, plus additional for garnish finely chopped
    2 teaspoons  lemon juice
    2  eggs beaten
    1/4 teaspoon  grated nutmeg
    1/3 cup  olive oil
      Flour, for dusting
    1 teaspoon  salt
      Freshly ground black pepper to taste
      Pita bread

Directions

Dunk bread in milk and press the liquid out to dampen the bread. Place bread in large bowl and mash with a fork. Add beef, onion, garlic, oregano, mint, lemon juice, eggs, nutmeg, salt and pepper and mix well. Measure out a large spoon-full of the mixture and form into a 1 1/2 -inch ball; roll each ball in flour. Continue until all of the meat mixture has been rolled and dusted in flour.

In a saute pan, heat the olive oil over medium-high heat until it sizzles when a drop of water hits it. Brown the meatballs in the oil in batches, leaving room in the pan to roll them around. Remove browned meatballs from the pan and drain on paper towels.

Serve with pita bread and Yogurt Sauce for Greek Meatballs. For Mexican meatballs, heat the Easy Chipotle-Tomato Sauce in a saucepan with the cooked meatballs. If desired, garnish with chopped parsley or mint.

Place sauce on platter and line up meatballs in rows. Place a tooth pick in each meatball for easy serving on hors d'oeuvre table.
Makes 12 servings.

EASY CHIPOTLE-TOMATO SAUCE: Puree 1(28-ounce) can of fire-roasted tomatoes with 1 (7-ounce) can chipotle salsa (such as San Marcos brand, or your favorite brand). Place mixture in a saucepan with 1 tablespoon of the leftover meatball cooking oil and simmer for 15 to 20 minutes, or until thickened.
